Grain-free meatless tortilla
When you forget to thaw meat… feeling innovative in the kitchen today. I am by no means a vegetarian or vegan. I doubt I ever will be knowing how much I know about meat and seafood and the essential vitamins and minerals you get from them that you just can’t get from plant-based foods alone. However, I do enjoy eating vegan and vegetarian meals and at vegan/vegetarian restaurants from time-to-time. INGREDIENTS:
3-6 Organic Swiss Chard Leaves
1 small vidalia onion peeled and chopped
1/2 cup organic pomegranate seeds
1 small tomato sliced
2 tablespoons organic pumpkin seed oil
2 tablespoons organic balsamic vinegar
sea salt
organic dill
3-4 non-gmo almond flour tortillas
DIRECTIONS;
1- Remove stems from chard, roll each leave tight and slice thin, add to large mixing bowl
2- Peel and chop onion, slice tomatoes and add both into mixing bowl
3- Add in pomegranate seeds, sea salt and dill to your liking
4- Add in pumpkin seed oil and balsamic vinegar
5- Toss until everything is covered in dressing
6- Add Ghee or grass-fed butter to a warm cast-iron skillet, place on low to medium heat
7- Place tortillas on skillet and warm for 2-3 minutes
8- Place warm tortilla on a plate load up chard salad and eat
9- You can definitely add in any meat or seafood to this as well. As I stated earlier I forgot to thaw meat so I got innovative with what I had in the fridge.
