NO BAKE CAKE

I brought this out to eat after dinner instead of ordering dessert from the restaurant.  Finding grass-fed burgers, pastured chicken or wild seafood is much easier than finding healthy desserts.  Just because they offer gluten-free doesn’t always means it’s a healthier option either.  If interested in holistic nutrition counseling for you or your family email me at nmoneer@comcast.net.

In a bowl add:

1 cup raw almond flour

1/2 cup organic banana flour

1/4 cup melted butter

2-3 tablespoons honey

Mix ingredients together until smooth like a thick chunky batter

In a 9″ square pan, cover with parchment paper, then spread and pat batter in evenly

Then add approximately 1 cup organic chocolate chips, scatter them and press them into batter in pan (you can add as much or as little chocolate as you like)

Then add fruit of choice, I used organic raspberries, next time I am going to use banana chunks or pomegranates

Place in fridge over night or in the freezer for 45-60 minutes before serving, serve immediately (if you travel with it like I did, keep it on ice otherwise it will get mushy and will not cut into squares)
